Strawberry Arugula Salad

This vitamin rich salad is one of my favorites!  It is bright and robust with minimal ingredients that are bursting with flavor.  Not only does it taste good, but it is packed with goodness.

On the other hand, one cup of Arugula contains only 5 calories.  And you get your folic acid along with a whole bunch of eye healthy ingredients.  It is also a great source of vitamin K, which is an essential nutrient to help your body heal against injuries like blood clots etc.

So here’s what you will need:

Baby Arugula Leaves, Strawberries, Feta Cheese, Sliced Avocado (Optional)

Dressing: Extra Virgin Olive Oil, Lemon Juice, Salt & Pepper
